Default Trophy Panfish vs. Trophy Other Species

As I read recent posts of trophy fish populations diminishing in northern lakes I'm enticed to know people opinions on catch and release trophy fishing. Most anglers on this board believe in the releasing of the larger "trophy" fish of a given species. I am of the same mind set and do so knowing that these fish are the breeders thats help support sustainable fisheries. So my question is this:

If we catch and release large fish of non-panfish species than why when people panfish (i.e perch, crappie etc.) do we try and target fish over 10" and bring home limits of the largest biters for the day? Not trying to stir the pot but rather just gain further knowledge and insight into doing my part to help maintain active fishing environments .
