Default Pheasant Recipes

Went out Sunday for my first pheasant hunt with a buddy who had a couple pointer dogs and a retriever. To say the least it was quite the experience and I can now see why everyone was telling me to be prepared to become addicted!! We ended up getting our limit within the first 2 hours and now we have some pheasant breasts and legs to cook up. Just wondering if you guys had some recipes or ways you like to prepare these birds as it will be a first for me. Thanks

Default Dinner

Got this from a friend years ago. Simple and time to have a cold one while it simmers.

Cut birds into bite size pieces.
Add to skillet with 1/3 cup diced shallots or red onion.
Brown in Coconut oil ensuring to get lots of the brown bits stuck to the pan.
When this is done deglaze with a few ounces of your favorite red wine.
Add 500 ml of sour cream, still, open cold one and simmer for 45 minutes.
Serve over rice or with what ever side dish you prefer and finish consuming the remaining red wine if so desire.
