Nova Lox
I made some Nova Lox from a chunk of chinook salmon we caught this Summer. 50/50 salt and brown sugar, dill and lemon zest. Dry brined for 24 hours and cold smoked for 9 hours.

Side note: do not mix bear with elk 1 to 1. Way too dry of a burger. 100% bear was really swell a couple of months ago. Flavour is pretty great though!

Rummaging in the big freezer, and unexpectedly ran across a few Racks of Lamb! Time for another Lamb fest...
From last fall's local harvest:
The appropriate marinade applied:
Then onto the BarBee:
Main side dishes were fresh pasta with a home-made sauce (sundried cherry tomatoes, garlic sliced thin, onions, spinach and canned chanterelles) dusted with freshly grated parmesan and yellar beans from the garden.

Usually reserve Yelloweye (Red Snapper) for the finer kinds of dining...
But rummaging for Din-din last night came across a vac-sealed bag that had somehow lost it's seal. So, in order to not let the stuff freezer burn, and to deal for a simple & quick meal, decided to Panko the fish and do up a few fries to accompany:
Blasphemy perhaps, but THE Best damn Fish & Chips we've ever had!!
