what does sturgeon taste like.
I know its illegal to kill them but back in the day how did they taste. Ive always wondered since they are bottom feeders.

Its either Washington or Oregon where you can still keep sturgeon. I don't know if I would even if I could. Just the thought of eating a 30+ year old fish and all the toxins accumulated over those years, no thanks.

I had fresh and smoked sturgeon back in BC before the rules on catch and keep changed, late 80's. A good friend kept a legal fish.
Fresh BBQ'd sturgeon, long grained firm texture, very much like a cross of halibut and chicken. Awsome. Even better was the fish we smoked. Again, the mild fish flavour with the incredible meaty texture, like pulling strips of turkey breast apart. There is a reason sturgeon were fished relentlessly for flesh and caviar, they are GOOD EATING! |

They are THE BEST smoked! Especially right out of the smoker and still warm. Back in the day, commercial fishers on Lake Winnipeg would keep their incidental catches of sturgeon. Every fisher in camp would find his or her way to the camp of the lucky catcher. They would just boil sturgeon steaks and the head. Served with onions and potatoes......EXCELLENT!
There are places in NW Ontario where an angler can keep a sturgeon. |
I will be trying some fresh sturgeon on my trip to BC in July. I will report how they taste.
