I found them to be tasty. Pretty darn lean though... so however you decide to prepare them, make it a pretty wet recipe. (But don't feel compelled to stick to stew!)

And there is a surprising amount of meat on them!

And, if you have a meat grinder, you can grind and freeze for use later in a sausage mix.

We used to cook them in the slow cooker. If we got a young one, we could 'shake & bake' it like chicken, but they awfully dry.
If you're carrying a big jack slung over your back any distance, watch out for the big fleas they carry. They don't bite people, but it's disconcerting to have a flea thats shaped and sized like a fresh-water shrimp - go scurrying across your eyebrow

Happened to me with the fleas as well, what a gross feeling. My grandmother (who was a wicked marksman) used to soak the rabbits in milk for 24 hrs to make them more tender, worked real well.

I will hunt Jacks through the fall and winter, but stop around March. That is about the time I start seeing them running around rutting.

In fall and winter I find them to be very tasty and tender.

It's always amazed me that when you hunt snowshow hares with a shotgun, even one or two pellets connecting will but the bunny down, apparently in 'shock'. But when hunting the big jacks, it takes a heart/lung shot to knock them down !!

Why the snow-shoes 'give up the ghost' so easily compared to the jacks - is a mystery to me.

Where are some good places to look for jacks?
I'd like to get my pup out and practice tracking them.
Thanks,
hf

You might want to try for snowshoe hares, if you want to 'track'. For chasing jack rabbits, you'll need a 'heads-up' sight hound.

Also - it would help to know where abouts you live, if you want people to point you in a direction for finding hares.

If you know how or want to try, get a chicken pot pie recipe and substitute the chicken for Jack Rabbit. A couple rabbits makes a few pies.

A couple rabbits makes a "few pies"!!! A couple Jacks from down south would make about 12 pies!

I only shoot one at a time, otherwise I have to go back to the truck for the game cart! Lol.

Default Jack rabbit

What is the difference between a Jack Rabbit and a Snowshoe Hare.....I thought they were one in the same until you get down South of the border. I always thought we just had cotton tails and snowshoes here.

Briefly, Jackrabbits are actually hares, cottontails are rabbits.

You are better off tracking Snowshoes if you have a scent hound like a Beagle. Jacks are way to fast for the hounds, although if they are lying in shrubs and you are quick on the draw you could probably shoot some but your dog would be on the jump too. Pretty dicey. The Jacks seem to prefer the sanctuary of the city. Try heading out to some forested areas to chase snowshoes.

I've never tried them. An old fella that has since passed told me when I was a kid that they were full of worms. Kind of turned me off trying them.
