Default Pheasant leftovers

OK so I have eaten more pheasant in the last month than I have in the last 5 years. Honestly, growing up on a pheasant farm my kids wouldnt eat it so we stopped cooking it. Now with Brooks, Stettler etc we have to use a lot of pheasants up and have tried pretty much every recipe given on this forum (Oldgutpiles Pheasant Parmesan was my favorite) so today with 4 leftover parmesan breasts and one thigh/leg I tried to make up my own.
Put on a pot of rice and then in the frying pan on low heat placed the already cooked breasts and leg.
Took one of my wifes jars of homemade medium salsa and covered the meat and cooked/warmed for 1/2 hour on low. Turned the meat pieces once at end of half hour and covered again for 5 to 10 minutes.
Left over very moist pheasant served on a bed of rice and then the rice soaks up all the juices from the salsa.
Now I dont feel as bad as we will kill more this week!! Life is tough!

Rob,
I feel so sorry for you having to eat all that Pheasant.
NOT!
But I know what it's like. I'm stuck eating ribeyes and rouladen.

Life is tough WW. I've had 2 excellent pheasant dinners in the last couple weeks. Once done in cream, once done in a shake and bake type batter. Not sure which I like better, so I'll have to try them both again.
