Homemade smoker thread
We all love smokers so thought I would start a thread to pique everyones interest.
I finally got around to building a smoker after looking at all the great homemade smokers on this site.
Today is my maiden trip.
Mine is an old steel drum with air holes in the bottom that I can open and close to adjust air flow.
I still have to make a better (tighter) lid but she is holding 225F right now for about an hour so far.
Got some pork ribs with some mesquite chips in the smoker, hoping for an 8 hour cook time.
I put some metal rods in as well to hang some pepperoni sticks, hopefully tomorrow
I sure like seeing those old fridge smokers but can never find one.

Nicely done and the ribs look awesome!
I have plans for a plywood box lined with sheet metal on roller so I can roll it in and out of the garage.
MM what did you use for a burner??

I used lump charcoal for the the burn on saturday. If you look at the one picture, You can see the basket in the bottom. I fill that up with the charcoal and wet smoking wood. I can open or close the 3 nipples coming into the smoker to raise temperature or choke it to maintain temp.
I raised the basket off the floor so the ashes can fall thru to keep it burning good.
I will use compressed briquettes next time though as they will last longer. I had to refill the basket once to get to 7 hours smoker, which was a pain.
But other than that, charcoal is great. Nice constant heat that inexpensive.
good luck with your smoker. Sounds like you have a good design there. Post some pictures when you get it done.

Map Maker, where do you live? I think I should try some of those ribs to make sure the smoker smokes properly before I build one...

You can get those at wal-mart. they also had the digital with alarm on rollback here last week for 19.99

I have the Centro Digital smoker, but it's not as cool as the homeade ones.
For the meat thermometer, I bought a nice digital one from crappy tire. It has settings for your different meat types, timer, etc. I think it was $15.00.

my smoker is 2 layer plywood with foam insulation between. the bottom 1/3 is sheet metal on the inside and i used a set of racks from an old fridge. i also use a propane burner and a cast iron frying pan for my chips. i do fish and jerky and it works well.

I'm a law obiding citizen but I must say if I were walking by and saw and smelt that thing going i have to admit hopping the fence for a nibble on those ribs would cross my mind Awesome job what time is dinner?

pepperoni is getting prepared tonite for the weekend.
My thermometer is from my deep fryer kit. Hard to find the ones that have the full temperature range.

hb the 2 layers with foam is a great idea! Must keep the heat well. Where did you get your burner and I sure would like to see some pics if you have some, thanks!
